Although Dalmatian cuisine is well known for its array of aromas and flavors, some of the most interesting dishes are a result of poverty. Such is the case with mišanca – wild, edible herbs which used to be gathered in order to survive.


Today, however, the story has changed. Mišanca can be consumed in a number of ways – prepared na lešo (shortly boiled in salted water), mixed with spinach or swiss chard in order to improve mišanca's bitter flavors, or as a side dish accompanying numerous fish and meat dishes.

Salata od liganja i krumpira is a traditional salad originating from Dalmatia. It's made with a combination of squid, potatoes, onions, salt, pepper, vinegar, and olive oil. The potatoes (with their skin on) and squid are boiled in salted water.


Once the potatoes become tender, they're peeled and thinly sliced, while the squid is cut into rings, as well as the onions. The ingredients are mixed and seasoned with salt, pepper, olive oil, and vinegar. Once prepared, the salad can be served warm or chilled.

Đurđevačka salata is a Croatian salad originating from the city of Đurđevac. It consists of beans, onions, cabbage, pumpkin seed oil, and vinegar. In order to prepare the salad, the beans should be soaked overnight, then cooked. The other ingredients are chopped and combined with the beans.


All that’s left is to season the salad with salt and pepper, then add vinegar and pumpkin seed oil. The finished salad should be placed in the refrigerator overnight, then served the next day, preferably as an accompaniment to pork roast.

Salata od slanih inćuna is a traditional dish originating from the coastal Kvarner area. The salad is made with a combination of anchovies, olive oil, wine vinegar, garlic, onions, parsley, black pepper, lemon juice, olives, and sliced tomatoes that are usually used as a garnish.


The salted anchovies are cleaned and placed in vinegar in order to subdue the saltiness. They are then arranged in a bowl and mixed with all other ingredients just before serving. This fish salad is traditionally served as an appetizer before the main dish.

Salata od smucnja i kuhanih jaja is a traditional salad originating from the Kvarner area. The salad is usually made with a combination of samphire, olive oil, wine vinegar, eggs, and black pepper. The samphire is washed, boiled, and left to cool down, while the eggs are hard-boiled, peeled, and cut into quarters.


The two are mixed, drizzled with olive oil and vinegar, and then seasoned with black pepper to taste. Salt is redundant as the samphire contains natural sea salt.

Salata od kokošjeg mesa na slavonski način is a traditional salad originating from Slavonija. This meat salad is served as an appetizer and it's usually made with a combination of hen meat, celery, carrots, potatoes, cauliflower, peas, parsley, mayonnaise, salt, and pepper.


The hen is cooked with celery, parsley, and carrots. Once tender, the meat, carrots, celery, and parsley are chopped into pieces and mixed with boiled peas, potatoes, and cauliflower. The salad is seasoned with salt and pepper, mixed with mayonnaise, and sprinkled with chopped parsley.

Poparena salata is a traditional salad originating from the Međimurje region. It's made with a combination of lettuce, bacon, eggs, vinegar, and salt. The lettuce is washed and seasoned with salt. The bacon is heated in a pan, mixed with vinegar, and the combination is then mixed with the lettuce.

Šokačka salata is an old Croatian recipe for a hearty Slavonian salad. It's made with a combination of homecooked ham, cooked and chilled chicken breast, tomatoes, peppers, spring onions, pickles, pumpkin seeds, sunflower seeds, and boiled quail eggs.


The ingredients are cut into small cubes, then mixed together and dressed with red vinegar and either sunflower or pumpkin oil. This salad should be served in glass bowls, then garnished with chopped parsley. If the boiling method proves too time-consuming, the ham and chicken pieces can also be shortly sautéed for a faster preparation of this rustic salad.

Popurena salata is a humble Croatian dish that's made with a combination of vinegar, water, salt, sugar, pork fat, and lettuce leaves. The water and vinegar are poured into a pot with the addition of salt and sugar. Once heated, pork fat is added to the pot, and when it melts, the lettuce leaves are added to the combination and mixed thoroughly.


Popurena salata is always served warm, and it's especially good when served as an accompaniment to another traditional dish called popara.

This tasty salad is named after its town of origin, Varaždin. The salad consists of chicken breast fillets, mustard, mayonnaise, red pepper fillets, gherkins, apples, white wine, horseradish, salt, pepper, and parsley. In order to prepare it, chicken breasts should first be cooked with root vegetables.


When the meat is cooked, it is then taken out of the pot and cut into strips. Apples, red peppers, and gherkins are also cut into strips, then combined with the meat, mustard, and mayonnaise. The salad is seasoned with salt, pepper, and horseradish.
