Chouchin is a traditional yakitori dish. This type of yakitori is very rare because it consists of pieces of chicken meat that are skewered, grilled, and accompanied by an egg yolk. There are two ways of eating chouchin yakitori – the egg yolk is broken and the meat is dipped into it, or the yolk is placed in the mouth, popped with the teeth so it bursts, and then followed by the meat from the skewer.
"Toritama Shirokane Honkan at the Shirokane area is an izakaya that serves more than 30 chicken cuts yakitori style. Unusually, they also offer this rare part of a chicken called 'chochin' (or lantern), which is the yolk of an unlaid egg before it becomes an egg. It’s a must-try."
"I ended with the Chouchin, which comprised chicken uterus with two undeveloped yolks attached. I was instructed to eat it all in one bite, and it was a real treat, with the lush, runny nature of the egg working hand-in-hand with the charred, chewy meat."
