Long Beans

Long beans, Chinese long beans, asparagus beans, snake beans, or long-podded cowpea are elongated, thin green beans that have a pronounced flavor and an earthy, beany flavor. The long beans are also not as sweet as the regular green beans.


They're usually stir-fried, braised, or steamed, but can also be added to various stews. These legumes are prized for their retention of texture and color when cooked.
