Uni nigiri sushi

Uni nigiri is a traditional type of nigiri sushi. It consists of hand-pressed sushi rice that's topped with uni, sea urchin gonads that produce roe with a creamy, firm, delicate, and smooth texture and a rich, briny flavor. The uni is placed on top of the rice, typically with a dab of wasabi in between.


Interestingly, for this type of nigiri sushi, soy sauce is usually brushed on top of the nigiri sushi, making it complete without having to dip it in the sauce.
