Prosciutto Cotto

(Cooked Prosciutto)

Prosciutto cotto is one of the two varieties of prosciutto, unique for the fact that it has been cooked. It is one of the most commonly bought deli items in Italy, and thinly sliced, light pink meat is mostly used in a variety of sandwiches and pizzas.


The production process is rather different than the one of prosciutto crudo: pig thighs are first deboned, then rubbed with seasoning, steamed or boiled, and left to cool before being packed and sold to consumers.
