Quang-Style Noodles (Mì Quảng)

(Quang-Style Noodles, Mi Quang)

This Vietnamese classic consists of a combination of flat rice noodles and yellow egg noodles that are served with a small amount of flavorful meat broth and crispy fresh vegetables and herbs such as banana blossoms, lettuce, cilantro, scallions, and Vietnamese coriander.


The dish is incredibly versatile and usually comes topped with pork belly, chicken, shrimps, fish, boiled eggs, roasted peanuts, and fish crackers. Though it originated in Central Vietnam, more precisely the Quảng Nam Province, mì quảng is nowadays enjoyed throughout the country.

"Located in a super good location and with a long standing history, what you get is great tasting and generous dish. Chewy rice noodles, some broth, and choice of pork, shrimp or chicken. The pork is very tender and well marinated."

"I’ve covered the ins and outs of this dish before and was really impressed with 1A’s execution. Even though they replaced my beloved sesame cracker with a shrimp chip, the mi quang tom was a fabulous bowl of noodles."

"The key was the sauce. Thin with brown globules of fat and flavour floating on its surface with just about enough fish sauce to provide taste, but not too much to overpower."
