Wimer Winter is an American cheese hailing from Rogue River, Oregon, where it's produced by Pholia Farm Creamery and Dairy. The cheese is made from raw goat's milk and it's produced only during the fall and winter. Underneath its washed rind, the texture is semi-hard, firm, and creamy.


The aromas are strong, yeasty, and pungent, while the flavors are strong, salty, and earthy. This cheese is usually left to age from 60 to 80 days before consumption.
