Siltcoos is an American cheese hailing from Oregon, where it's produced by Rivers Edge Chevre. The cheese is made from pasteurized goat's milk, and it's coated with ash and topped with fern during the maturation process. Underneath its bloomy rind, the texture is soft and supple.
