Siltcoos is an American cheese hailing from Oregon, where it's produced by Rivers Edge Chevre. The cheese is made from pasteurized goat's milk, and it's coated with ash and topped with fern during the maturation process. Underneath its bloomy rind, the texture is soft and supple.

The aromas are fresh, clean, and herbaceous, while the flavors are creamy and buttery with a tangy finish, with strong and spicy notes developing as the cheese ages. It's recommended to serve Siltcoos with Dalmatian fig jam and pair it with a glass of Pinot Grigio.
