Namazake

The term namazake refers to the unpasteurized sake—Japanese beverage brewed from rice. The process of production is the same as for regular sake, but in the case of namazake, sake is bottled before it is pasteurized and needs to be refrigerated and consumed soon after opening.


Namazake is distinguished for its fresh crisp and vibrant flavor, while it can also display stronger fruit notes. It is usually enjoyed in spring when the traditional sake brewing process is finished. Namazake is always served well-chilled, preferably paired with fish-based Japanese dishes.
