Haystack Mountain Feta is an American feta-style cheese hailing from Colorado, where it's produced by Haystack Mountain Goat Dairy. The cheese is made from pasteurized goat's milk and it comes packed in brine and whey. The texture is dry, firm, and crumbly, the aromas are lactic, fresh, and clean, and the flavors are mild, tangy, and slightly salty.
