Ossau-Iraty is a traditional French cheese made from pure ewe's milk, representing the regions of the Basque Country and Béarn. It is the only cheese from the Pyrenees with an Appellation d'Origine Contrôlée (AOC) status, granted in 1980. The cheese is aged for a minimum of three months in cool cellars at around 12°C, developing a pink to light gray rind and a compact, hole-free interior.
