Comté AOP, aged over 24 months, is a premium French cheese made from raw cow's milk, renowned for its rich flavor and firm texture. Each wheel weighs approximately 37 kg, requiring a significant amount of milk for production. Traditionally produced and aged in "fruitières" (cooperatives), the cheese is meticulously cared for over an extended aging period.

During maturation, it develops complex aromas and gains a more intense flavor. When the cheese surpasses three years of aging, its texture becomes crystallized, delivering a unique gastronomic experience. This Comté is ideal for tasting on its own or paired with fruit jams, nuts, and high-quality wines.
