Ellington

Ellington is an American cheese originating from Fairview. This semi-soft cheese is made from goat's milk. Underneath its bloomy, ash-coated rind, the texture is soft and creamy. The aromas are pleasant, while the flavors are full and sweet.

This cheese has won many awards, invluding a Taste of the South award in 2014. Ellington is also available as a pack of three pyramids, named Ellington Trifecta.
