Cotechino in galera is a traditional dish originating from Emilia-Romagna. It's especially popular in Modena. The dish consists of cotechino, a fresh pork sausage that contains cotica (cooked pork skin) or pork rinds, giving it a unique texture.
Although the sausage is most often boiled and accompanied by lentils, in this dish it's ''in prison'' (in galera), because it's placed inside rolled beef. The sausage meat is spread over a slice of beef that's subsequently rolled, covered with pancetta, then tied with twine.
The concoction is traditionally marinated in a combination of red wine (preferably Sangiovese di Romagna), carrots, onions, celery, and bay leaves. The rolled-up sausage is then simmered in a combination of the same marinade alongside butter, beef broth, and tomatoes.
