The Trote del Trentino (trouts from Trentino) belong to the rainbow trout species, reared in tanks supplied with water sources that fall within the Autonomous Province of Trento, in the Trentino Alto-Adige region, and in the municipality of Bagolino in the province of Brescia, in Lombardy.


The quality of the water used is decisive for the farming of Trote del Trentino. Water is particularly abundant in this area, thanks to the presence of perennial snowfields and glaciers, with high oxygenation, excellent chemical-physical-biological properties and a low average temperature (below 10° C from November to March).

Tinca Gobba Dorata del Pianalto di Poirino is a freshwater fish born, raised and bred in the Altopiano di Poirino ponds which are located in the provinces of Turin, Asti and Cuneo, in the Piedmont region. These clayish lands are scattered with small natural lakes called peschiere, in whose low, warm and muddy waters the Tinca Gobba Dorata (golden humpback tench) has found an ideal habitat.


Tench breeding has an ancient history in this area: due to the scarcity of water, farmers used to gather rain water in the lakes to provide water for cattle while breeding these fish to be sold or eaten at home. Traditionally, ranches were fished during spring to have a fresh protein supply after winter, and at the end of summer to have fish to preserve in carpione in the winter.

Arctic char is a freshwater fish native to Alpine lakes and arctic and subarctic coastal waters. Salmerino del Trentino refers to fresh char fish farmed in the pure, cold waters of numerous Trentino lakes and reservoirs, namely within the provinces of Trento and Brescia.


The qualitative characteristics of this fish are directly linked to the production area. In particular, the waters in which Trentino char is farmed originate from perennial snowfields or glaciers; they are extremely abundant, present high levels of oxygen, favorable biochemical qualities and have a fairly low average temperature.

Filetti di Ventresca di Tonno from Callipo are premium products made from the finest yellowfin tuna, known for their rich flavor. These fillets are prepared from the ventral muscles of the tuna, the most prized part of the fish, and are carefully hand-cut into fillets.
