Tullum is one of the smallest Italian wine regions. It is located in Tollo municipality, in Chieti, Abruzzo. The region was officially recognized in 2008, initially as a DOC, but in 2019 it was promoted to the DOCG status, which is the highest level in the Italian appellation system.
Tullum includes red and white wines. Red Tullum is the flagship label. These wines are made from the Montepulciano variety (minimum 95 %). These ruby red wines tend to turn garnet with age. They have a fruity aroma, reminiscent of cherries, plums, and blackberries, often with some jammy notes.
Tullum or Terre Tollesi is a small DOCG appellation from of Chieti, Abruzzo. The region produces Montepulciano-based red wines and two white labels: Passerino and Pecorino. As evident from the name, Tullum Pecorino is made from Pecorino grape, a variety native to Italy and mainly cultivated in Marche and Abruzzo.
The wines are golden-colored, fresh, and aromatic. The aromas are usually a blend of fruity and herbal notes such as pear, apple, peach, rosemary, and sage, with some floral, citrus-like, and tropical nuances. They usually have good acidity and mineral backbone.
Tullum, also known as Terre Tollesi, is one of the smallest Italian DOCG wine regions, located around Tollo in Chieti, Abruzzo. It produces red wines from Montepulciano and white wines from Pecorino and Passerina—one of the old Italian varieties mostly found in Marche and Abruzzo.
In Tullum DOCG, Passerina has to make at least 90%, though the wines are usually entirely made from Passerina. The wines are straw-colored with delicate floral and fruity aromas reminiscent of citrus fruit, peaches, and elderflower. It can have a subtle almond finish.
MAIN INGREDIENTS
Corfinio is a herbal liqueur created in 1858 by Giulio Barattucci. The liqueur is produced in Chieti, and it is made with a secret recipe that combines 42 different herbs, roots, and seeds. It is flavored and colored with saffron harvested in the Abruzzo region.
The liqueur has a distinctive yellow color, smooth texture, and intense herbal flavors and aroma. It is still produced following the original recipe. Corfinio slipped into obscurity in the 1970s, but Baratucci's descendants reintroduced it in 1988.
This herbaceous liqueur works great as an aperitif or a digestif, served neat or over ice.
