Baesuk

Baesuk is a type of hwachae—traditional Korean fruit punch—which is made with large Asian pears (Pyrus pyrifolia). The pear is steamed or slowly simmered in water, which is sweetened with sugar or honey until it’s soft and thoroughly cooked.


The fruit can be sliced or left whole, while the variations also include peppercorns, which are pressed onto the surface of the pear. Sometimes the water can be flavored with ginger, and the whole pears can be filled with combinations of pine nuts and jujube.


Baesuk can be enjoyed warm or chilled, and though it is usually classified as a beverage, it is sometimes referred to as a dessert. Its origin stems from Korean royal court cuisine.
