JUMP TO RECIPE

We strongly advise you to read the cooking tips before jumping to the recipe though

Cooking tips

  • meat

Beef and lamb are the traditional choice, although some also go for goat and chicken. Regarding beef, which is most commonly used, beef tenderloin and rib meat with some fat are preferred. The meat is typically cut into cubes or strips.
  • method

Outside Ethiopia, the meat is typically softer, which is why it is first cooked in the pan without adding anything to help it release all its liquid. Only after that step is the meat fried or stir-fried. In Ethiopia, the meat is tougher and is thus stir-fried from the start.
  • additional ingredients

Onion, tomatoes, and chili peppers are typically added to the meat near the end of cooking. Some recipes will also include garlic. As far as seasonings go, salt and pepper are typically used, as well as rosemary.
  • serving

Derek tibs is usually served on a plate with injera bread and awaze sauce. Some also dab some niter kibbeh on top of the meat or serve mitmita spice blend on the side.
