"Although their best anchovies are the ones they sell salted, that is, to remove the salt, rub them by hand and de-bone them at home before putting them in oil (you can try them at the El Oso restaurant ), the ones they package as semi-preserved are also not at all evil. They pack them in olive and sunflower oil, because they are of the opinion that the less strong the oil, the better for the anchovy. Light brown in color, good bite and deep iodized flavor. No trace of thorns. They also sell them smoked, very delicate."
