Although fresh tomatoes are preferred, most recipes call for canned ones or tomato passata to speed up the preparation process.

This is the traditional recipe for marinara sauce, which is made with just tomatoes, garlic, olive oil, oregano, parsley, and salt. It gives the option of choosing between fresh tomatoes and passata, the choice of which will impact the cooking time — it will be longer if you opt for fresh tomatoes.
750g (26.5 oz) ripe and peeled tomatoes or tomato passata
1 garlic clove, sliced
extra virgin olive oil, as needed
salt, to taste
dried oregano, to taste
fresh parsley, a handful, chopped (or, frozen parsley), to taste
Wash and peel the tomatoes — for instructions on how to peel tomatoes, check our “cooking tips” section.
Add the extra virgin olive oil to the pan, add the garlic, and briefly sauté until golden.
Next, add the finely chopped tomatoes (or, tomato passata) and cook until it turns into a sauce.
Take off heat, then season with salt, oregano, and parsley.
