Fireside apples

Fireside is an American apple variety that was introduced in 1943 by the Minnesota Agricultural Experiment Station. It’s a cross between McIntosh and Longfield varieties, characterized by being able to withstand very low temperatures.

The chewy skin has a typical peening, as if hit by a tiny hammer thousands of times. Beneath the skin, the flavors of the yellow-green flesh are mild and balanced between sweet and sour, with hints of pears. Fireside apples are harvested in September or October and they keep very well.

It’s recommended to use them in salads or baked goods.
