The 2020 Chardonnay Select from Big Head Wines is an exceptional wine that reflects the unique characteristics of the Niagara, Ontario vineyards. The dry conditions during the harvest resulted in concentrated grapes, which are evident in the richness of the flavors.

The production process, which includes seven days of carbonic maceration and fermentation in Slovenian oak vats, contributes to the wine's complexity. Half of the wine was aged in new Moldovan oak barrels, adding notes of spice and vanilla, while the other half remained in the vats, resulting in a perfect balance of oak and fruit aromas.

Aromas of ripe apple, pear, peach, wafer, and mushroom permeate this wine, while the palate is dominated by flavors of ripe pear, pineapple, and tangerine. Dry and fresh, with rich flavors and a long finish, this wine is recommended with rich fish, seafood, or white meat, and surprisingly pairs well with classic fish and chips.
